Hello Human Beans!
While 2020 proved to be the year when everything stopped, it’s still Taco Tuesday and I’ll let NOTHING AND NO ONE take this beloved tradition away from me, and neither should you! Let’s face it, while we technically can go dine outdoors for our favorite happy hour tacos or drinks, we can hardly ignore the anxiety induced by being way too close to people not wearing masks, let alone those unfathomable but existing human beans who don’t wear masks at all, passing by on the streets! That being said, we can still enjoy restaurant style tacos without the stress of having to leave our home. This simple recipe for Pork Poblano Tacos was originally sent to me by Everyplate, the meal kit delivery service I subscribed to since March. (No, this is not an ad, it’s just truly been super easy, zero hassle, and cheaper to have my groceries and meals planned out throughout the week). *ALWAYS WEAR GLOVES HANDLING SPICY PEPPERS. I ended up with a case of Hot Pepper Hands when I removed the ribs and seeds with my bare nails and fingers. I endured this for 6 hours so you don’t have to! Protect those digits, BB!
Also, if you’re not into spice at all like me, don’t worry. Taking out all ribs and seeds of the peppers really does the trick. However, swapping them out for bell peppers is a nice sweet and fresh alternative too. You got this babe!*
