I’m back BBs! Now that I’ve returned from my mountain retreat, it’s time to get back into my regular hectic schedule. Whenever I’m lacking in time or imagination, this almond butter “toast” recipe is a fool-proof and delicious way to get nutrients and chocolate into any meal, whether it’s for breakfast, a snack or dessert! It’s a very easy, quick, and flexible vegan dish to make on meatless mondays, or any day throughout the busy week!

Believe it or not, I got into the almond butter on toast with fruits trend pretty late into the game, after watching Victoria Secret supermodel, Romnee Strijd, carry her own almond butter packets and rice cakes on her YouTube video about the snacks she eats while traveling. At the time, I was looking for bread alternatives as I was trying to cut out carbs (I don’t do this anymore, and I definitely do not endorse completely taking away a whole food group from your diet). Though I’m no longer afraid of bread, I actually still reach for this rice cake treat and eat this as a midnight snack, breakfast, or dessert multiple times a week. It is so extremely easy and I always feel satiated afterwards.
There are many iterations of this by other influencers, but I’ve come up with my original stamp—I drizzle sweet chocolate tahini on top! This is perfect for chocoholics like me to satisfy that chocolate craving in a more natural and nutritious way. You definitely need to try this over your almond butter toast and fruits! It really takes it to another level!
