This special egg salad has been a staple in my new commitment to Meatless Mondays. What’s so special about an egg salad? Well, this isn’t just any type of egg salad. This has an extra crunch and sweetness because of its secret ingredient. Can you guess what it is? It might be surprising but genius! Drum roll please... it’s apple! I know. Bet you didn’t expect that one coming.

As I‘m fairly new to the tradition of meatless Monday (not to mention I’m super lazy and require something quick and easy), I first looked up egg salad recipes online. I stumbled across two that I infused together to make the BEST egg salad. For this recipe, I used techniques and ingredients from Youtube‘s Bon Appétit Channel and Preppy Kitchen.
